Freezer Cooking

I decided to try out a Once A Month Meals membership for a month and put together one of their 30 days of meals menus. It was fun planning all week. Picking out recipes, shopping, and buying goodies. Yesterday I chopped everything in site. And then today I put everything together.

Took me about 6 hours and now I have these in my freezer. :thumbup:


  • Spinach Manicotti with Tomato Cream
    Smoked Gouda Caramelized Onion Pizza
    Slow Cooker Split Pea
    Slow Cooker Moroccan Lentil Soup
    Salsa Verde Kale Enchiladas
    Quinoa, Beet, & Chickpea Burgers
    Caribbean Coconut Rice
    BBQ Tempeh Sandwiches
    BBQ Tofu with Pineapple
    Cheesy Broccoli Cups
    Brown Rice, Carrot, & Ginger Cakes
    Strawberry, Basil, Honey, Goat Cheese, Quesadilla
    Banana Nutella Muffins

It was a lot of fun and now I'm looking forward to enjoy all this food!

Anyone else freezer cooking?
 
I do it in the winter a couple of times - and also supplement by making "double batches" of stuff that freezes well.

Here are a few dishes that are fully cooked and freeze beautifully (just thaw, heat, make minor additions for a few and serve):

Adirondack Bacon BBQ Chicken, Apples, and Onions
Pioneer Woman's Baked Ziti
BBQ Chicken, Red Bean and Corn Country Chowder
Bourbon Chicken
Ham Noodle Dinner
Homemade bbq sauce (to throw on chicken and bake)
Old Fashioned Pork and Beans (I use Navy beans)
Pepperoni and Sausage Pizza Soup Recipe
Cabbage and Apples (side dish to go with perogies)
Pizza Lasagna
Saucy Pulled Pork (this recipe isn't too sweet but can easily be sweetened to taste towards the end)
Sweet and Sour Red Cabbage with Apples (side dish I like with breaded pork chops)
Banana Pancakes


Here are some uncooked freezer dishes (where the meat is raw and needs to be thoroughly cooked):

Cranberry Chicken
Honey Baked Chicken
Hot and Sour Chicken Thighs
 
I don't freezer cook so much because I like things to be fresher, especially since we're vegan and everything is plant based - some things I just don't like reheated because the vegetables lose their crunch :D Some of the meals below are cooked completely and then refrigerated (like the chili and soups) and the others are chopped and prepped all except for the actual cooking.

But, I do refrigerate cook a week at a time for lunches and dinners. This week we're having:
Veggie Chili on baked potatoes
Thai Sloppy Joes
Szechuan Soba Salad
Mediterranean Stuffed Sweet Potatoes
Vegetable Korma
Shepherd's Pie Soup
Buffalo Chickpea Bowl
Tortilla Soup

My cooking day is Monday, so tomorrow I'll be chopping away :)
 
I LOVE freezer cooking... however, I don't remember to take out the day's meal from the freezer in the morning...haha. I wish we had a bigger freezer, so I can only make about 10 items at a time. :) You will have to let us know what are hits and misses in your list! :wub:

LOL! Thanks Rebecca! I have all the food in the freezer, but it did not come with a 'menu plan' with side dishes etc.. I still have to do that! :p
 
I have wanted to try something like this but we not really big on leftovers. I'd be the only one eating if I tried it. We cook enough for a day at a time. If there's anything left, that usually becomes my lunch for the next day.
