Curry - help!

Ok, I am SOOOO in the mood for curry tonight. I want to make something from scratch with what I have on hand, but I need help about cooking time and what to add, etc. :confused: This is what I have on hand:

1 sweet potato
1 onion
5 small red potatoes
baby carrots
1 each of red, green, yellow bell peppers
1 cup of white mushrooms
chickpeas
green beans
1 cup of cooked chicken
curry powder
garam masala
can of light coconut milk
chicken broth


I know I can make a curry with these things... I just need help with measurements, cooking times, and which things I should add or leave out. I was hoping to maybe throw it all in the crock pot.

:) Help! :unsure:
 
All I know about curry is that the old place I worked at there was a little boy named Currie, who loved curry, but it did not love his tummy. lol
 
you can dice the peppers in one inch size, same with onions.

Saute onions in a 1-2 teaspoons of vegetable oil. When they're translucent, add the peppers. Add salt and some water.. just enough to make some gravy. Then, add 1-2 teaspoon of garam masala. Cook till peppers are tender. It shouldn't take you more than 30 minutes. You can also add curry powder if you want. Measurement for both spice mixes are very forgiving. Add some, taste how you like it, add more if you want more spicy. I would add minced jalapeno peppers or Serrano peppers, but you can leave those out if you're not used to eating spicy stuff. Garam masala should have enough to give you the spicyness.

you can also make egg curry, but I think that would need more onions. But, for future reference, I'll give you the recipe anyway! :)

I would throw all those veggies in there myself and Ripal's recipe with the garam masala sounds delish. I'll bring the rice...what time is dinner?????
