Default Darcy...I need some Alton help! :)

Hey Darcy! DH & I are smoking a brisket on Saturday & we really would love Alton's recipe, but can't find it on his or food network's website. Would you happen to have it or know where I could find it? I'll you forever!

No, that one uses a brine, and has to soak or whatever for 10 days! He has one that he did in a smoker for several hours.

ETA: I don't know what a brine is...this was just DH's response! LOL

Deb - I can't even place a time when AB wouldn't brine something that was going to slow cook that way - even for a smoker. He brines everything LOL. I'm looking....and I'll ask some 'friends' who can help me think of the episode you might be talking about. I went through my discs, but I don't have anything other than the Where there's smoke there's fish episode". I know he smoked a fish in the army locker on the South Beach show, but I don't even remember him doing meat in it at all. The flower pot smoker even had a p ulled pork that was brined.

But I'm looking!

No - not at all.

I would even go so far as to not brining the brisket. My grandfather never did at all. Beef doesn't need brining the same way pork and poultry would. So give it a go w/o the brine! (AB isn't right about EVERYTHING - I know - heresy LOLOL)

I hate to hate on the Alton fans here, but that guy is a little weird. My daddy has been smoking briskets for YEARS and has NEVER brined them! And my daddy learned from one of the BEST brisket smokers ever! LOL
