JOURNALING:
"Stuffed" Mini Meat Loaves; Ingredients: 1 egg; 1 5.5 oz V-8 juice; 1/4 C chopped onion, sauteed; 1/2 t salt; 1/4 t pepper; dash of cayenne; 1/2 pkg "Stovetop" Cornbread Stuffing; 1 T soy sauce; 1 1/2 T Worcestershire; 1/2 C shredded cheese; 1 # 80-20 ground beef. Directions: 1. Mix well all ingredients except beef. 2. Add beef and mix to just combine - DO NOT OVERMIX. 3. Scoop with large ice cream scoop into 12 muffin tin. 4. Bake 350 degrees for 15 minutes. 5. Cool. Great served with baked beans and mashed potatoes. LABEL: Meatloaves served topped with mashed potatoes and "smiling" tator tots. 3/22/23
