Copy Cat Recipe

JOURNALING: Stouffer's Foods used to sell Welsh Rarebit cheese sauce that I really liked. Unfortunately, they stopped selling it in 2021. Just recently I found this copy-cat recipe from the Wimpy Vegetarian website and decided to try it. I'm glad I did - yummy! I like it served overe toast topped with chopped broccoli and bacon - delish! 11/14/24

Ingredients:
1 Tbl unsalted butter
1 1/2 Tbl flour
1/4 C milk
1/2 C dark ale
1 tsp dry mustard
2 tsp Worcestershire
1/8 tsp pepper
6 oz grated Cheddar
dash cayenne pepper
1 egg yolk
Directions: Melt butter overe low heat. Whisk in flour; cook until thickened and lightly toasted, (2 minutes). Whisk in milk and allow to thicken (1-2 minutes). Whisk in ale, then mustard, Worcestershire sauce, pepper, cheese and cayenne. Simmer over medium-low heat while whisking until a smooth sauce develops (2-3 minutes). Remove from heat. Whisk in egg yolk to get a velvety sauce. Serve immediately.

Really nice looking layout. LOVE the cute cooking elements, especially the rack of tools and the fabulous, iconic, cookbook on the shelf. Glad the recipe you located was able to help you make an old favorite meal!
