We went apple picking the other day and have almost 25 pounds of Macintosh apples. I want to make homemade applesauce and of course, apple crisp... but I'm wondering what else I should make... looking for something new. I was thinking maybe some apple coffee cake. I dunno... so what's your favorite thing to have that's made of apples. Got any good recipes?

For some reason I've always been intimidated with making apple pie. :/ I feel like it's probably hard to make but it probably isn't that bad...
Apple butter, now that sounds perfect!!

apple pie isnt hard at all. My son made it with his classmates in first grade. I had to cut up all the apples for them and they each made two mini pies. It was really easy.

We went to the apple orchard today. Our local orchard has a little cafe connected to it and they served the most amazing ice cream drink:
apple cider, apples, ice cream, and a dollop of caramel
Yum, yum, yum! But I will have to walk extra tomorrow to work it off!
Otherwise, we like apple pancakes and we even put apples and cranberries or cherries in with pork. Yum!
Can't wait to hear what everyone else is doing with their apples. We didn't pick nearly enough and I'm afraid we're just going to end up eating them, they are so fresh and delicious!

Loved these: Apple pumpkin muffins (http://aslansavz.wordpress.com/2010/03/29/apple-pumpkin-muffins/)- and they freeze well for breakfast/snacks.

While this is about bruised apples, you can do it with any - do them in small chunks, and be able to add them to baking all winter long :)

We also bought apple donuts at the orchard. :p But if your apples are as delicious as the ones we picked up, slice 'em up and serve 'em with cheese. That's my favorite nighttime snack!

Oh and I absolutely LOVE apple slices with peanut butter spread on them or a caramel sauce to dip them in.

Rachael, I just now realized that you only live in SW Vermont....I'm in Upstate NY, just south of Lake George....Can I ask where you pick apples? My youngest sister takes the ferry over to Vermont to pick apples, but I can't remember where she goes....I'll have to ask her just to see if it is the same place you go out of curiousity--not so I can stalk you....LOL
Anyhow, here is a very easy recipe that I have made using Pillsbury Grands! Biscuits that you pop out of the "can"....Very delicious!http://www.pillsbury.com/recipes/upside-down-caramel-apple-biscuits/0912270f-feee-4062-bbb5-9f3732cc15d5/http://s3.amazonaws.com/gmi-digital-library/55c49d0e-a5ea-4a21-98eb-faa401d0537f.jpg
