CHOCOLATE MINT COOKIES
2 devils food cake mixes
1 family size brownie mix
3/4 cup water
3/4 cup oil
3 eggs
3 boxes Andes Mints (About 84)
Add wet ingredients to mixes. Stir well. Batter will be stiff. Drop by teaspoonfuls of batter onto greased cookie sheets (I like to use a small scoop). Bake at 350 degrees for 8-10 minutes. Put an unwrapped mint on each cookie while still HOT; let melt. Spread melted chocolate with the back of a spoon. Let cool completely. This recipe makes about 7-8 dozen cookies.

These are my absolute favorite chocolate chip cookie: Soft Chocolate Chip Cookies (http://allrecipes.com//Recipe/award-winning-soft-chocolate-chip-cookies/Detail.aspx). I'm not allowed to go to any family function without bringing these. Using chocolate pudding and peanut butter chips is a super yummy variation, too. I don't add nuts though, since my family prefers them without. It's fun to experiment using different flavors of pudding and chips. And they stay soft, which makes them perfect for shipping!

One of my faves I just put up on Heather's blog a few days ago:

Gotta try Leila's as I LOVE brownies...

BETTER THAN JUSTIN TIMBERLAKE BROWNIES :p
1 pkg. brownie mix (any kind)
1 jar marshmallow creme (7 oz.)
1 c. butterscotch chips
1 c. milk chocolate chips
1 c. Rice Krispie cereal
Make brownies according to directions on package. Cool completely. Spread fluff over brownies. Melt chips in small saucepan. Add Rice Krispies. Mix well. Spread on top of fluff.
Have fun experimenting: different chips, different brownies, adding nuts, etc.
Supereasy and super delish! My SIL, who doesn't do a lot of cooking, asked me for the recipe and brought them to Thanksgiving this year, so I'm taking that as a sign of how good they are. :)
